VARIETY
Mundo Novo is a larger variety of coffee with medium-small grains.
This plant thrives in middle positions around 1000 -1300m.n.m ..
The coffee tree was grown by crossing the Typica and Bourbon varieties at the Brazilian Agronomic Institute.
PROCESSING
Coffee from the IP farm is processed by traditional methods for this area - natural, pulp natural and fermentado.
In this case, the coffee cherries are dried on the terraces in direct sunlight after harvest.
After reaching approx. 11% moisture, the grains are peeled from the pulp and ready for further sorting and cleaning.
The coffee is packed in 60 kg jute bags with a special GrainPro liner.
TASTE PROFILE
Coffee has a very pleasant low acidity. Its taste is very pure with a clear character.
The taste is dominated by nuts, almonds and dark cocoa.
Fine buttery body complemented by the aroma of baked chocolate body.
