Arnaud Causse previously devoted himself to cattle breeding. The Las Terrazas del Pisque farm, located on the calm slopes of the Andes mountains at an altitude of between 1700 and 2100 metres in a parched desert microclimate, was taken over in 2012 and began planting the forest. On this incredible farm, Arnaud has created an almost perfect ecosystem. He planted a forest consisting of 25 species of woody species in the middle of an arid desert area to protect his coffee trees. These trees are mostly of endemic origin, and at the same time some serve as hives for bee colonies. When the trees are in full bloom, the bees pollinate the plantation and collect nectar from the flowers of coffee trees, lavender and raspberries. To protect its bees, Arnaud does not use any pesticides on his farm. He treats coffee trees with essential oils from aksamite, lavender and rosemary, which he produces himself. Lots of fruit trees serve as a shelter for birds, and legumes are also planted here, enriching the soil with nitrogen. As a result of this work, its plantation grows, among other things, in the shadow of acacies, fig trees, cypresses or eucalyptus trees.

Arnaud Causse himself aptly says that all the trees on his first farm in Las Tolas know each other, and the coffee tree is the only intruder here, while on the second farm in Las Terrazas del Pisque all the trees are alien to each other, so they do not reject coffee trees and are not intruders for other plants in the local ecosystem. This farm is named after the El Pisque River, which flows in the valley and is powered by melting snow from the Cayambe volcano.
Currently, Arnaud only 15 of the 40 hectares are farmed because it has to draw water from a source more than 8 km away. However, it aims to farm up to 25 hectares as soon as possible.
For cultivation on this farm, he chose the same varieties as those found in Las Tolas, i.e. those he knows well: Caturra, Yellow Caturra, Tekisik Bourbon, Pacamara, Pacas, Java or the brand new Las Tolas hybrid variety, which is an Ecuadorian mutation of Bourbon and some new Ethiopian plants.

The love of coffee has brought Arnaud Causs to every corner of the world. The first coffee experiments took place in Kenya, Costa Rica, Gabon, Equatorial Guinea and Côte d'Ivoire.
His experience contributed to the development of coffee selection projects, such as the establishment of cooperatives in El Salvador and the Galapagos.

The ripening period of coffee cherries is from May to October, and harvests at Las Terrazas farm take place exclusively by hand. This coffee is a blend of several varieties of coffee trees that have been processed by the machine and even though it is mixed from several types, it has appealed to us very much in its complexity and therefore we decided to buy it. Pleasant and fresh acidity is complemented by a high sweetness of coffee, which is as a result pleasantly harmonious and balanced.

In the taste of this coffee you will find notes of black cherries, apples, blackberries and chocolate.
