It is cooked over a low heat. After a few minutes, the water in the lower container begins to change into steam and travels through the coffee funnel to the top, where it condenses into water. The valve located on the side of the bottom container filled with water is a safety valve that should prevent overpressure when the steam passage is blocked upwards (eg when the filter is clogged with too fine coffee).
